In Suckumento, you could find over 20 shops run by Asians that sell crystalized ginger. Surely there are such "specialty" shops in your town? If not, let me know, and I can send you the stuff by the tonne (note my ability to spell in Australian, heehee). I love ginger, BTW.
I can get raw ginger all over the place, and even have some roots in the pantry. What I have to do is shop around and look for it. I used to just grab it from the small fruit&veg store that sells ungassed tomatoes.
The idea is to not have to work at it, sort of like buying toffee instead of making it. I could make it if I was really desperate but I prefer to open the brown paper bag from the shop.
Like the candied ginger? heck... got it in any grocery store here, especially this time of year, sold right next to the candied cherries, pineapple, and stuff ... to put in fruit cakes.

As a fellow ginger addict - in desperation, Woolworths usually have the Buderim range - only in 250g packets though. But the "hot" version is worth looking for. I remember when we lived in Dubbo and went to Queensland for holidays that a visit to the Buderim Ginger Factory and a tour through it was one of the joys...we'd come away with BIG bags of crystallised ginger, including their super hot... happy memories!(heavens, I see from their website they moved to the new factory in 1979 - I am OLD dammit...)I am also addicted to their ginger refresher which I add to lots of things - also good with just soda water.
