Yesterday Uncle Bill got back from Tasmania and handed me 2kg of home-smoked atlantic salmon.

Lunch today was home-smoked Atlantic Salmon and Castello cheese, with lettuce, black pepper and a squeeze of lemon on bread.

There are huge fish farms south of Hobart. When the fish escape they swim upstream to be caught by local fishermen.

The fishermen love the seals, because seals love the fish and have worked out how to open the fish farm nets.

*whines and dies of envy* Smoked salmon is one of my FAVORITE foods and it's almost impossible to find here for some reason. Can't get much better than smoked salmon, a nice soft mellow cheese, and a green salad.
